Cinnamon Snickerdoodle Cake with Cinnamon Chips

Who doesn’t love a good snickerdoodle cookie?  Well now you can love a snickerdoodle CAKE!!!!  And this cake has a little something extra added in it!  I used these Hershey’s cinnamon chips to just take this cake to the next level.

I’ve had cinnamon chips in the cabinet since the holiday’s since they were at the store, I decided to try something new! I’ve found if you can’t find them at the store, you can order the Cinnamon Chips here on Amazon!

Something I want to try next that I think sounds amazing is adding banana to this.  But for now, we will keep this yummy goodness just the way it is!  I actually made these in the mini loaf pans thinking maybe it’ll last a little longer.  Well I was wrong about that!  I did wrap one up and gave it to a friend, but the other went just as quick at work!  

Every fall my family spends an entire weekend making homemade apple butter the old fashion way.  It’s a pretty long process, but I’m so very thankful for them taking the time out their busy schedules to make some amazing goodness!  I added this to a slice of this bread and it was amazing!!  

I love how one recipe can be eaten so many different ways.  It really just goes to show the depth of this cake!  

So let’s get to the actual recipe!  This cake has a crunchy cinnamon sugar topping, but it is also loaded with yummy cinnamon chips.  Who knew such a small thing can be so amazing??  

If you love cinnamon sugar, this is a cake that can be used as bread as well, that is a must try.  It’s so very moist and tender and full of cinnamon flavoring throughout.  Every bite just gets better and better, you can just ask my coworkers!  

If you want them to last longer and not eat them all at once or share with your family and friends, you can freeze these individually.  Just wrap them tightly in a few layers of plastic wrap and they will last 3-4 months in the freezer.  Its great to pull out of the freezer at the last minute for something tasty!

Like I said earlier, I made these in mini loaf pans, but you can make them in 2 of the bigger pans, you will just need to cook them for 65 minutes or longer.

Ingredients
  

  • 1 cup Butter softened at room temperature
  • 2 cups sugar
  • 1 tsp vanilla
  • 3/4 cup sour cream
  • 2 1/2 cups flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3 tsp cinnamon
  • 1 10 ounce bag of cinnamon chips
  • 2 tbsp flour

Topping

  • 3 tbsp sugar
  • 3 tsp cinnamon

Instructions
 

  • Preheat the oven to 325
  • Spray the mini loaf pans with non stick spray
  • Cream the butter and sugar together until it's nice and fluffy.
  • Add the eggs, vanilla and sour cream to the sugar mixture.
  • In a seperate bowl, stir together the flour, baking powder, salt and cinnamon.
  • Add the flour mix to the wet ingredients and continue to mix on low.
  • Add the cinnamon chips to another small bowl and toss with two tablespoons of flour to coat them. This will prevent the chips from sinking to the bottom of the cake.
  • Divide the batter into the 4 mini loaf pans.
  • Stire together the topping ingredients and sprinking over the cakes. Be sure to use all of it, trust me, it's worth it!
  • Bake at 325 for 50-55 minutes or until the toothpick comes out clean.
  • Cool in the loaf pans for 5-10 minutes, then remove and let them cool on the cooling racks.
  • ENJOY!
