Everyone knows that I love an easy one pan or pot meal! Everyone also knows that I believe in meal prepping for success. Not only that, but if I didn’t meal prep, I’d probably live off of vending machine food.
I love using my cast iron skillets for just about everything that I cook. I no longer have any other skillets or pans. I just think that cast iron cooks food much more evenly and holds the flavoring so much better.
This meal is a super easy, filling and healthy hash and you can get all of your veggies in with just one attempt. If you are cooking for just yourself, this meal will last you all week. Just add your favorite type of egg to go with it and BOOM! You have a breakfast that is filling, nutritious and healthy.
I go to the gym early in the morning, so I typically don’t eat beforehand. So having this on hand, is key to getting my day started right! Not only do I get my workout in first thing in the morning, but I get a great, homemade breakfast every morning. It’s a healthy combo of protein, fat, carbs and veggies.
What is Chorizo you ask? Chorizo is a Spanish pork sausage. Its flavor comes from dried smoked red peppers. The smoky flavor of this sausage adds so much flavor to the boring eggs and sausage dish. This has become one of my go-to breakfast sausages because it gives your breakfast such a different taste then the normal breakfast. It’s so versatile, I use it in so many different dishes! Just like my Zuppa Toscana recipe that I love!
When making this, feel free to use your favorite potato, including a sweet potato. Chorizo and sweet potatoes go amazing together. I just used the potato that I currently had on hand.

Chorizo Breakfast Hash
Ingredients
- 1 lbs Chorizo, sugar-free and ground
- 1 lbs Red Potatoes
- 1/2 Red bell pepper
- 1/2 Green bell pepper
- 1/2 Yellow bell pepper
- 1/2 Yellow onion
- 3 cloves Garlic
- 3 handfuls Spinach
- Oil of Choice
- Salt and Pepper
Instructions
- Chop potatoes while heating a large pan over medium heat. Add oil.
- Once hot, add potatoes and season them with salt and pepper. You can always add more seasoning later. Be careful, because some sausages can be saltier then others.
- Cook potatoes until fork tender. I like mine crispy around the edges. Stir occasionally, about 8-10 minutes.
- While potatoes are cooking, cut up peppers, onion and garlic.
- Once potatoes are finished cooking, remove from the skillet and set aside.
- In the same skillet, add in chorizo. Be sure to break it up into smaller pieces. Halfway through cooking, add in the onion and garlic.
- Once that has fully cooked, add in the peppers and cook for an additional 4-5 minutes more.
- Add in the cooked potatoes and spinach and mix all ingredients together.
- Cook until the spinach wilts.
- Add your favorite type of eggs and enjoy the most delishious breakfast!
