I have to tell you, I love a good homemade cookie that is tasty and easy to make. I know baking scares a lot of people off, but truth be told, it’s actually one of the easiest things. The recipe is provided for you and as long as you follow it, without modifications, your cookie will turn out perfect!
Unlike cooking or grilling, baking is something that you should follow the recipe and not modify too much until you’ve figured out what kind of modifications you want to make and how they will turn out. But just beware, when you do make modifications, it might take a few tries to get it right! But that’s why I’m here, I’ve made many cookies that have not turned out right, but now I have the recipe just how I want it!
These cookies look like your classic chocolate chip cookie, but with mint chips and a minty flavoring added in them. Something I don’t like to skip on is the chocolate and mint chips that I’m adding to the cookie! You can never have too many! I also added some andes candies to this recipe because I like how the chocolate melts through the cookie just perfectly!
After my butter starts to soften to room temperature, I will add it to my mixing bowl as the oven is preheating and I begin to mix my dry ingredients together. It will need just a few minutes. The butter should be melted just a little and you can see the butter starting to drip from the edges.
Once I add the cookie dough to the cookie sheet, I top it with some leftovers from the mix of chocolate chips, andes candies and the mint chips. I have made many cookies that are just too much dough and not enough of the chips. And the chips are the star of the cookie! So you want to be sure you add enough. Even though I’ve made these for St. Patrick’s Day, these are also perfect for a Christmas time cookie as well. These can be made during all times of the year because who doesn’t love an after-dinner mint cookie??
This recipe can be cut in half if you want about 2 dozen, but when I’m making them I always like to make extra so there are enough to go around. My co-workers and neighbors really enjoy the homemade sweet treats that I share with them. So they recipe below will make about 48 cookies.
Mint Chocolate Chip Cookie
Ingredients
- 3 cups all purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup butter, soften in the oven
- 1 cup light brown sugar, packed
- 1/2 cup granulated sugar
- 1 teaspoon pure peppermint extract
- 3 cups mint chips, chocolate chips and chopped andes candies mixed together
Instructions
- Preheat oven to 350 degrees. Line two baking sheets with parchment paper.
- In your mixing bowl add the butter and put it in the oven while it's preheating and let it melt. Just until it's soften all the say through.
- In a small bowl, combine flour, baking powder and salt. Fluff together.
- Once the butter is softened and melted just a little, pull it out of the oven and let it cool for a few minutes.
- Once cooled, mix the butter and both sugars for 2-3 minutes, scraping the bowl as needed until creamy.
- Add the eggs and peppermint extract and beat until combined.
- Slowly add in the fluffed flour mixture and continue to beat until combined.
- In a separate bowl, mix together 1 cup of the mint chips, 1 cup of chocolate chips and 1 cup of the chopped andes candies.
- Add most of the mint chip, chocolate chip and andes candies mix to the dough. Save about 1/4 cup of the mix to top the cookies just before baking.
- Scoop a spoonful of the dough and place a few inches apart on the cookie sheet.
- Use the remaining mint chip, chocolate chip and andes candies mis and top the dough.
- Bake for 9-11 minutes untl the edges are beginning to turn golden brown, then pull them out of the oven.
- After about cooling the cookies for about 2 minutes, carefully move the cookie to a cooling rack and let it cool completely.
