Today we are going to talk about this amazing chili that I made. I have a secret ingredient in there as well! I love easy meals that are limited on clean up because it can all be made in the same pot. Whether you are using the instant pot or making it on the stove with your dutch oven, both ways will turn out amazing! When I have more time, I will make it on the stove just because I like to let it simmer for a while. If making this during the week, it’s easy to chop everything and throw it all in the instant pot and it’ll be done in about 20 minutes or so after the you turned on the pressure cooker.
I haven’t had my instant pot for long, but I’ve made so many things in it already that I never thought I would! I have even been making some dried fruit. See my recipe here for the dried apples and pineapple. The pineapple is my favorite mixed with some nuts for a snack.
Back to the chili, I know, I got off topic. Let’s talk about this incredibly easy and flavorful chili recipe! I make this regularly because it’s so good and so easy! I like to mix up my peppers because it makes the chili so colorful and delicious! Also, I typically take the seeds and stems out of my jalapeño peppers. Depending on how spicy you like it, you can keep them in. You know what you and your family like, so you decide how hot to make this!
I love adding bacon to this recipe because well, bacon makes everything better! That’s my secret ingredient! It’s one of those things that it can be used as a garish or to add flavor to the dish. You can use it both for this if you’d prefer to keep it crispy and top your chili with the bacon at the end.
Adding in the cauliflower rice thickens this up nicely! You are adding in another vegetable to make this just that much healthier and hearty! This is such a comfort food, you can now have your favorite comfort food and it be healthy and loaded with vegetables all at the same time!
So grab your dutch oven or instant pot and get to chopping your veggies and be ready to make the best chili that has a secret ingredient added that everyone will love!!
My Famous Chili with Bacon and Veggies
Ingredients
- 1 lb grass fed ground beef
- 1 lb italian ground sausage
- 1/2 lb bacon If you are doing a Whole30, besure the bacon is sugar free. Cut the bacon into pieces.
- 1/2 medium onion
- 1/2 green bell pepper
- 1/2 red bell pepper
- 1/2 yello bell pepper
- 2 small jalapeno peppers, seeded and minced
- 4-5 cloves garlic, minced
- 28 oz can diced tomatoes
- 6 oz can tomato paste
- 1-1.5 cup bone broth If I have chicken stock in the fridge, I'll just use that
- 1 tsp cumin
- 1 tsp smoked paprika
- 1 tbsp chili powder
- 1/2 tsp chipotle powder
- 1 tsp salt
- 1 bag cauliflower rice
- avocado slices
- plantin chips
Instructions
Instructions for cooking in a dutch oven on the stove:
- Before beginning chop your onion, green, red, yellow and jalapeño peppers. Also, mince your garlic cloves and set aside.
- Cut your bacon in bite size pieces.
- Add the bacon to your pot and sauce until crispy. Remove and set aside. Drain most of the bacon grease, but not all of it. Keep some for the ground beef and sausage.
- Add the ground beef and ground Italian sausage to the leftover bacon grease. Break up the ground sausage while it’s cooking.
- Add the onion, peppers, garlic, tomatoes, tomato paste, broth and all spices.
- Stir together and let it cook for about 30 minutes and let all flavors really blend together.
- Once it’s ready, add in the cauliflower rice and bacon back in and stir until fully combined. This will thicken the chili up nicely.
- Top with avocado and plantain chips and enjoy!
- If you aren’t dairy free, add your favorite cheese.
Instructions for cooking in the Instant Pot
- Before beginning chop your onion, green, red, yellow and jalapeno peppers. Also minceyour garlic cloves and set aside.
- Cut your bacon into bite size pieces.
- Turn your instant pot on to the “saute” mode. Once the pot is hot, add the bacon and cook until crispy. Once the bacon is cooked, use a slotted spoon and set it aside.
- Drain most of the grease, besides just enough to cover the bottom of the pot.
- Add beef and sausage and cook while breaking up the pieces with a spoon. Cook it until about 75% finished cooking. Then add the onion, peppers, garlic, diced tomatoes, tomato paste, broth and all spices.
- Place the lid on and be sure to turn the vent to seal, cook on high pressure for 10 minutes.
- Once its complete do a quick release of the pressure, the add the cauliflower rice and stir. Add the bacon back in and stir until everything is combined.
- Enjoy with your favorite toppings. I top mine with avocado and plantain chips!! It gives it a old fashion chili that I remember growing up!
