Preheat the oven to 350. While the oven is preheating, go ahead and line a few trays with your favorite baking paper.
Put the butter in a metal bowl and place it in the preheating oven. Leave it in until the butter starts to melt around the outsides. Take out and let it cool.
As your butter is cooling in a separate bowl, combine the flour, baking powder and salt together and fluff the mixture.
Once the butter has cooled, add both the sugars and beat together until light and fluffy.
Add the vanilla and the eggs, beating between each addition and until mixed.
Add your flour mixture a little at a time and beat on a low speed until combined.
Fold in the chocolate chips until mixed together.
Take a spoon full of your liking of the cookie dough and drop it on the baking sheets.
Bake one tray at a time for 11-13 minutes. You will have to play around with the timing depending on the size of your cookies.
Bake until just browned around the edges, then let them cool for 2-4 minutes on the cookie tray, then transfer to a wire rack.
Makes about 3 dozen depending on the size of your cookie.
