Who doesn’t love a good festive cookie during the holidays? No matter what, cookies are always a great go-to when attending party or even just for the office. I will tell you, everyone in my office always loves the fun cookies, just because they are a little different and so many people like to try new fun things!
These green cookies are also very easy to make. There are not a lot of ingredients and it’s quick! You will have to let the dough chill for about an hour or so prior to baking, but you can let that go while make dinner or doing a load of laundry! This is a good time to actually fold that load of laundry that’s still in the dryer!
Or you can make this yummy soup for dinner while they chill! This is one of my favorite soup recipes. It’s the Zuppa Toscana with Chorizo Sausage. It is easy to make, filling and super yummy!
So let’s get back to these fun, easy loving, mint cookies! First off they are a fun green color! Second, they also have Andes Candies in them and who doesn’t love Andes Candies? And third, they are made with a cake mix! How easy and fun to make with the kids? I’ve seen recipes done with cake mix before, but I’ve never tried it. So I decided to give this one a try. I decided to use the Betty Crocker Butter Recipe Yellow cake. Since I wasn’t adding in any butter, I figured this might give it a little buttery taste.
I added in some M&M’s to this recipe because who doesn’t love a good mint M&M? When I was walking down the baking isle and I saw these, I just had to get them. Of course I didn’t use them all in the recipe and had a few to hold me over until the cookies were done cooking.
You will have to use some muscle when mixing this together and because you are using food coloring I would suggest using a glass mixing bowl so no food coloring stains your bowl. I love these mixing bowls from amazon. They also have the lids so all you have to do is put the lid on while letting the dough chill in the refrigerator.
Most of these ingredients you will already have on hand, so if you need something to make at the last minute for a party of an event for your kids, you are in luck!
Green Mint Chocolate Chip Cookies
Ingredients
- 1 box Betty Crocker Butter Recipe Yellow Cake Mix
- 1/2 cup olive oil
- 12-14 drops green food coloring. Start with a few drops and continue to add and mix until desired coloring.
- 2-4 drops pure peppermint extract
- 1 cup Andes Mint Candies, chopped (or andes baking chips)
- 1/2 cup mini chocolate chips
- 1/2 cup Mint M&M Candies
Instructions
- Mix together cake mix, eggs and oil in a large bowl.
- Add the drops of green food coloring to the dough and continue to mix until you have your desired green coloring. I made mine a little darker green for St. Patrick's Day.
- Add the pure peppermint extract.
- Stir in the Andes Mint Candies, Mini Chocolate Chips and Mint M&M's.
- Chill the dough in the refrigerator for 1 hour.
- Preheat the oven to 350 degrees.
- After the dough has chilled, form rounded balls and place on a cookie sheet lined with parchment paper.
- Bake 10-12 minutes or until done.
