Green Mint Chocolate Chip Cookies

A yummy, easy and festive cookie that everyone will love! It's easy to make with the whole family!

Ingredients
  

  • 1 box Betty Crocker Butter Recipe Yellow Cake Mix
  • 1/2 cup olive oil
  • 12-14 drops green food coloring. Start with a few drops and continue to add and mix until desired coloring.
  • 2-4 drops pure peppermint extract
  • 1 cup Andes Mint Candies, chopped (or andes baking chips)
  • 1/2 cup mini chocolate chips
  • 1/2 cup Mint M&M Candies

Method
 

  1. Mix together cake mix, eggs and oil in a large bowl.
  2. Add the drops of green food coloring to the dough and continue to mix until you have your desired green coloring. I made mine a little darker green for St. Patrick's Day.
  3. Add the pure peppermint extract.
  4. Stir in the Andes Mint Candies, Mini Chocolate Chips and Mint M&M's.
  5. Chill the dough in the refrigerator for 1 hour.
  6. Preheat the oven to 350 degrees.
  7. After the dough has chilled, form rounded balls and place on a cookie sheet lined with parchment paper.
  8. Bake 10-12 minutes or until done.
  9. Enjoy!!
