Green Mint Chocolate Chip Cookies
A yummy, easy and festive cookie that everyone will love! It's easy to make with the whole family!

- 1 box Betty Crocker Butter Recipe Yellow Cake Mix
- 1/2 cup olive oil
- 12-14 drops green food coloring. Start with a few drops and continue to add and mix until desired coloring.
- 2-4 drops pure peppermint extract
- 1 cup Andes Mint Candies, chopped (or andes baking chips)
- 1/2 cup mini chocolate chips
- 1/2 cup Mint M&M Candies
Mix together cake mix, eggs and oil in a large bowl.
Add the drops of green food coloring to the dough and continue to mix until you have your desired green coloring. I made mine a little darker green for St. Patrick's Day.
Add the pure peppermint extract.
Stir in the Andes Mint Candies, Mini Chocolate Chips and Mint M&M's.
Chill the dough in the refrigerator for 1 hour.
Preheat the oven to 350 degrees.
After the dough has chilled, form rounded balls and place on a cookie sheet lined with parchment paper.
Bake 10-12 minutes or until done.
